Banana & ABC Butter Cake



Ingredients:

  • 2 bananas
  • 2 cups of oats
  • 1 cup of ABC nut butter, or any nut butter you desire
  • 1 teaspoon of baking powder
  • 1/2 cup of honey or rice malt syrup
  • Pinch of sea salt
  • 1 teaspoon of vanilla extract
  • 1/2 cup of natural organic yoghurt
  • 1/2 cup of cacao nibs or raw dark chocolate bits


Method:

Preheat oven to 200 degrees celsius/390 degreesF. In spring form, cover the base with baking powder and set aside.
In a food processor, combine all ingredients (except for the cacao nibs/raw dark chocolate bits) and blend until mixture is consistent and smooth.
Gently with a spoon, mix in half of the cacao nibs/raw dark chocolate bits into the mixture and pour into the prepared spring form. Even mixture out with a spoon and then sprinkle remaining cacao nibs/raw dark chocolate bits on top of your mixture.
Bake in the oven for approx 20-30 mins or until toothpick inserted into the centre comes out clean.
Once your cake is ready and cooled, carefully cut the cake into 8-10 slices.

Jam & Nut Balls



Ingredients:

  • 1 cup of almonds
  • 10 dates
  • 1/3 cup of raw cacao powder
  • 1/4 cup of Mayver's original super spread or any nut butter of your choice
  • 2 tablespoons of Henry jones & co mango, passionfruit & chia seeds or any jam of your choice


Method:

In a food processor, blend the almonds and dates together.
Then add the raw cacao powder, nut butter and jam.
Blend until you have a consistent smooth texture and then roll into roughly 10 balls, depending on the size you choose.
Put in the fridge for 2 hours.

Sweet Potato & Quinoa Burgers



Ingredients:

  • 1 cup of sweet potato, cooked and mashed
  • 1 cup of quinoa, cooked
  • 2 tablespoons of parmesan
  • 3 gloves of garlic, diced
  • 1 teaspoon of baking powder
  • 2 spring onions, diced
  • 2 tablespoons of chives, chopped
  • 2 tablespoons of lupin flakes
  • 2 tablespoons of Jomei's fine foods balsamic vinegar
  • 1 onion, diced
  • Pinch of sea salt
  • Pinch of paprika
  • 2 tablespoons of coconut oil
Method:

Firstly, cook the sweet potato and quinoa, mash the sweet potato, and then place both aside while you prepare the rest of the ingredients. On Medium heat, cook the onion and garlic with 1 tablespoon of coconut oil and then set aside.
Combine the sweet potato, quinoa, parmesan, baking powder, spring onions, chives, lupin flakes, balsamic vinegar, sea salt and paprika. Then finally add the onion and garlic and mix the combination together thoroughly.
Form the mixture into roughly 6-8 balls, depending on the size you want.
On medium heat, cook each patty with the other tablespoon of coconut oil for 4 minutes on each side.
When you place the pattie in the frying pan, make sure to press down firmly with a spatula, they may fall apart so be careful when turning.
Place patties on fresh wholemeal buns, or bun of your choice and serve with an abundance of fresh salad.

Green Tea Protein Balls


Ingredients:

  • 1 cup of almond meal
  • 1 1/2 tablespoons of quinoa flakes
  • 8 dates
  • Coconut water
  • 2 1/2 tablespoons of coconut oil
  • 2 teaspoons of chia seeds
  • 1 1/2 teaspoons of matcha powder
  • 1 scoop of protein powder
  • 4 tablespoons of coconut


Method:

Combine all ingredients in a blender or food processor until mixture becomes moist and consistent.
Once blended, roll the mixture into balls of your desired size.
Place in the fridge for 2 hours.

Raw Energy Balls



Ingredients:

  • 2 cups of mixed nuts
  • 1 cup shredded coconut
  • 1 scoop of protein
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of raw cacao powder
  • 3 tablespoons of melted coconut oil
  • Pinch of sea salt
  • 2 1/2 cups of pitted dates
Method:

Add nuts to a food processor and blend until you have a consistent finely chopped mixture. Put mixture aside.
Add the rest of the ingredients in a food processor and blend until everything is combined. Then add the nut mixture to the mixture and blend until combined.
Roll mixture into balls, whatever size suits you, and place on a tray.
Place in the fridge for 1 hour.

Raw Raspberry Cheesecake




Ingredients:

  • 2 cups of macadamia nuts, soaked overnight
  • 12 pitted dates
  • 1 teaspoon of cinnamon
  • 3 cups of cashews, soaked for 1-2 hours
  • 1 lemon
  • 1/2 cup of rice malt syrup, agave syrup or honey
  • 1/2 cup of melted coconut oil
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of sea salt
  • 300g raspberries
  • 1/4 cup cacao nibs or dark chocolate bits
Method:

Strain the soaked macadamias and place them in a food processor with 10 of the dates and the cinnamon and mix until a consistent wet crumb is formed - this will be our base of the cake.
Place some baking paper at the bottom of a round cake tin, then pour the mixture into the tin and flatten. Place in the fridge until it is firm.
The next step is to make our cake mixture, start by straining the soaked cashews and place in a food processor with the lemon juice, syrup of your choice, coconut oil, vanilla extract and sea salt.
Mix until nice and creamy.
Pour the mixture evenly onto the cake mixture.
The last step is to organise the raspberry top layer. Start by blending the raspberries and the 2 remaining dates in a food processor until smooth. Pour mixture on top of the rest of the cake and smooth out evenly with a spoon. Sprinkle the cacao nibs or dark chocolate bits on top.
Place the cake in the freezer overnight.

Raw Chocolate Chip Cheesecake



Ingredients:

  • 2 cups of overnight soaked cashews
  • 3-4 tbsps coconut oil
  • 2-3 tbsps rice malt syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Handful of dark chocolate chips or cacao nibs
Crust:

  • 1 cup of walnuts
  • Handful of dates
  • Pinch of sea salt
  • 1 tbsps dried coconut
Method:

We are going to start with the crust by mixing all the crust ingredients, except for the coconut, in a food processor until you have a fine/crumbly texture. Using a spring form, sprinkle with bottom with the coconut. Press the mixture down evenly into the bottom of the spring form. Freeze for about 10 mins.
The next step is to prepare the filling of the cake, by simply combining all the ingredients, except the dark chocolate chips, into a food processor until you have a smooth texture. Pour the mixture on top of the crust and freeze overnight.
